place your bamboo sushi mat flat
place sushi nori
spread rice/vinegar mixture approx 3/8" thick
cut cukes, ham, flat scrambled eggs, and carrots or any other long vegie ie asparagus into long strips and place on end 1/3 of nori/rice
procede to roll into a sushi log, takes some practice, even if ugly still tastes great

I think I got this recipe from RB...Eggplant...mmmmmmmmm gud!
1-lg eggplant, unpeeled, cut into 1/2" cubes
1-lg onion chopped
1-green pepper, seeded, chopped
6-ripe 'maters, chopped (or 1-lg can crushed 'maters)
1/2-c chopped green olives
3-minced garlic cloves
1/3-c extra virgin olive oil
1/3-c red wine vinegar
1-t salt
1-1/2 t dried oregano
1-1/2 t dried basil
1-T chopped capers
Combine all ingred, bring to a healthy simmer, stirring occas. You can cook this over low heat uncovered for about an hour, or cover and cook over low heat for several hours. The slow stewing method blends the flavors very nicely, and the caponata is great reheated. Serve with garlic bread...mmmmmm

Stevia--This is what I use. A little costly (50 packs/$6-$7), but worth the cost and health benefits. I don't use it on a regular basis so it lasts a long time.

Many of our clients and email subscribers ask us about our opinion on the use of low calorie sweeteners. We have done a lot of research on this topic, and have come to the conclusion that, in our opinion, none of the artificial sweeteners are worth the potential health risk.
I will discuss the issue of toxicity related to these artificial sweeteners, but more importantly, I want to you to understand how the use of artificial sweeteners can, and usually does, lead to over-consumption of food, a false sense of “healthy” eating, and perpetuates the already vicious cycle of weight loss – weight gain among people who are trying to lose weight, prevent or treat diabetes, and control other diet-related health conditions.
In a recent article in News and Views from Well Being Journal, Vol. 13, 2004, I quote,
“You would just as soon have a pesticide in your food as sucralose because sucralose is a chlorocarbon.”
Evidence demonstrating the toxicity of aspartame has quickly grown. In particular, recent European research shows that ingesting aspartame leads to the accumulation of formaldehyde in the brain, other organs and tissues, which has been shown to damage the nervous system, immune system, and cause irreversible genetic damage in humans.
Many toxicity reactions have been reported to the FDA and other organizations. A recent report showing that nearly 100% of independent research has found problems with aspartame.
So how does this relate to Sucralose? Similar to the aspartame situation 15 years ago, we saw the same things happen: Pre-approval tests indicated potential toxicity of sucralose; “independent” controlled human studies on sucralose (similar to 15 years ago for aspartame); no long-term human studies of sucralose's effects; and no monitoring of health effects.
Think about this: It took government agencies decades to agree that thousands of people died as a result of tobacco use. Why? Simply because there had been no monitoring or epidemiological studies. Without such monitoring and studies, huge effects can easily go unnoticed. We hope that we will see a change in this type of practice very soon. Otherwise, we might as well just use any poorly-tested, artificial (lab-created) chemical that has shown potential for long-term toxicity.
There is very little pre-approval research related to sucralose. It is rarely published and is usually only available from the FDA by filing a Freedom of Information Act request. There is a very interesting short summary article available regarding sucralose and shrunken thymus glands in the "New Scientist" (23 November 1991, page 13). The thymus gland is the very foundation of our immune system. Most people do not need any additional problems with their immune systems. It is already hard enough to stay healthy these days. Sucralose has also been known to cause swelling of the liver and kidneys. Among other things, Sucralose can cause immediate reactions if you are sensitive to it, as I am. These include gas, bloating, diarrhea, and headache.
So what is the moral to the story here? If you are trying to reduce your calorie intake and lose weight or control your diabetes, do so by cutting down your portion sizes; choose fresh, organic, non-processed foods; rid your house of all packaged high calorie fast-foods; stop eating when you feel full; reduce the number of times you eat out in restaurants; and get up off the couch and start exercising! If you want a little sweetener in your coffee, it is best to stick with a little regular ol’ sugar! We use natural cane sugar, but only in small amounts. <<<<<<<<I disagree with the sugar, Stevia is a good natural sweetener.

Hey I have a lot of those already ... I cook and the wife eats LOL ... she hates to cook and I hate to clean thus we have a good relationship.
Going to check out coconut oil as an alternative to safflower. Will not use canola (rape seed nonsense) ... Also I am loking at other fat free items and making my own. I make fat free ranch dressing for the veggies. SO I am ready to snack away.

No I agree but the KISS principal and after meeting with my doctor this morning ... pay attention to calories and you automatically take care of the carbs. I have found this to be quite true ... ALso it is the consumation of FAT in a diet that is the main problem in my particular case which I am correcting. By watching calories carbs are factored in but watching the FAT is a down right hard situation which I am overcoming.
today I had maybe 25 carbs and 2g FAT and consumed about 1500 calories. Canalope two meals and two spinach mushroom items one a sandwich with low calorie bread Nature's Own WhiteWheat 1g total fat and 11g Carb per slice so times 2 = 2g Fat and 22 carbs, the other a salad with no fat ranch 30 calories because I make it out of skim milk and Kraft fat frre amyo (10 calorie no fat and 1g carb and some apple sauce and about 2 gallons of water.
So as you can see watching the fat and the calories you basically elimate carb worries. But I understand that is your focus being you health situation but I work out and I need the natural insulin thus I need to consume some carbs especially after working out.
So really we agree but taking to differnet approaches to the carb senario.

I guess we'll have to agree to disagree on that, I've lost 300 pounds, I'm strong as an ox, I'm off the insulin and balanced, I check twice a day, calories do count, but it's only part of the story, oh yeah, my heart is strong and according to artery sonogram my arteries are clear.
Remember this, I was the low fat diet for over as year, carb’s kill!! I stay at about 20 a day unless I’m working hard that day, then I go to about 30. Oh yeah, tried the calorie for years off & on, I won’t even go into that!
What’s wrong with America’s weight problem? Perhaps it’s the rising weight levels and diabetes cases that rose with the levels of carbohydrates enriched lives.
Each body is different and therefore requires different maintenance.

You can't see much of it, but I work out three days a week, I have to, I have a bad back, leg, knee and shoulder, not to mention I'm fighting to keep my legs, I'm unlucky enough to have both diabetes and psoriasis, UGH!!!
I exercise, and I stretch that's one of the reasons I'm still at 400 pounds according to my doc' he says I have a lot of muscle mass, hey, ant flattery counts, HARR!!!
I don't have a lot in recipes as I'm a cook who uses very little measurement or actual recipes, but I have a lot of tips, I'll try to share what I have as I come across them, but I stay pretty busy, I'm on 22 boards and I follow 5 more, and there's my 5 websites to continue to build on and maintain.
One tip that comes to mind is to use chicken bullion or a little broth and cook on real high heat and you can pretty much mimic stir frying, it isn’t quite the same as stir-frying and does not work on everything, but it does work, just don't salt anything!!!
Here's another tip, the whiter the cheese the better it is for you.
And another, use silverstone coated pans, it saves on oil, really!
And one more, a little butter is better than a lot of margarine.
OK, Last One, Don't worship at the alter of the scale, it's too damn depressing, once a week is plenty and a lot more effective as you'll see the weight drop off as what appears more rapidly in place of by the pound. And Remember; Muscle Weighs Twice As Much As Fat!!!

I fear the dangers of Low Carb Diet
High-protein, low-carb diets advocate consuming more protein-rich foods such as eggs, meat, fish and cheese and less carbohydrate-rich foods like bread, potatoes and pasta. The reasoning behind these diets is that too many carbohydrates cause the body to overproduce insulin, leading to weigh gain. Insulin transports sugar from the bloodstream and stores it in muscle and liver cells as backup energy. When these stores get full, insulin stores sugar as fat.
Another theory is that eating carbohydrates throughout the day causes a constant release of insulin, making cells less receptive to the effects of it, leading to insulin resistance. This means that glucose cannot be transported to muscle and liver cells, causing it to be stored as fat.
Flaws in Low Carb Diet Theory
The problem with these theories is that insulin only turns carbohydrates into fat if you consume more calories than your body needs. Also, obesity causes insulin resistance, not carbohydrates.
Following this type of diet means that your body will also be lacking fibre and antioxidants. A diet too high in protein can also adversely affect your bone strength and place strain on your kidneys.
Low Carb Diet & Ketosis
Ketosis is another possible side-effect of following this diet. If your carbohydrate intake is so low that the glucose needs of your brain are not met, your body will burn fat incompletely to produce a substance called ketone, which is a substitute brain fuel. This may cause light-headedness, nausea and bad breath.
Balanced Diet is Best for Weight Loss
So why do people who swear by these diets look so good? Probably because they consume fewer calories than people who follow other diets. Protein curbs hunger better than carbohydrates or fat. It is obvious, though, that this is not a long-term solution. Nutritionists still recommend that 50 per cent of your diet should come from carbohydrates. Cut out pastries and sugary foods, but include vegetables, seeds, nuts, oats, pulses and wholewheat bread, rice and cereal in your diet. These have a low glycaemic index (GI), meaning that they are slow-releasing carbohydrates. Also opt for monounsaturated fats like olive oil.

Also my trainer highly disagrees with the low carb. Balance diet is what is required and my doctor agrees ... stick to a low fat low calorie and under 2500 calories a day and be active as possible. It is working nicely.

I am gaining muscle definition and toning up nicely and wife (not very active) is eating what I am and losing without working out ...
GB... That's why I tell everyone I don't do the white drugs, sugar, flour and rice potatoes. When I have what I call a food day, rice is a winner, I love the stuff.
I didn't know brown rice had fat in it, I learn something everyday.
GB... Bananas are loaded. As they say, a 'tose is 'tose, is a 'tose, as in fructose and lactose, they are all sugar. I try to never eat sugar, and when I do it’s as you do which is in a natural form.
I take a multi vitamin a day, plus a calcium, manganese & zinc compound, extra b-6 & b-12, Potassium, Chromium peconolate and selenium, I also take a healthy dose of fiber in the mornings, help with a lot of things including keeping you cancer free, another reason I eat so much cabbage, it’s an anti carcinogenic as well as a fiber source.
I also drink at least 3-34 oz. cups of water a day, plus all my other fluids, like mugs if of coffee and two mugs of tea at night and an occasional diet soda pop.
Hell, I'm the healthy disabled gimped up fat man I know, HARR!!!!

Here is a good meal ... Tuna Steaks
This is great ...
BROILED TUNA STEAKS
4 tuna steaks, about 1 inch thick (2 lbs. total weight)
Salt and fresh ground pepper, to taste
4 sprigs fresh thyme, chopped or 1 tsp. dried
1 tsp. fresh grated or dried powdered ginger
1 sliced clove garlic
2 tbsp. soy sauce
1 tbsp. fresh lemon juice
2 tbsp. Safflower oil
In a mixing bowl blend the salt, pepper, ginger, garlic, thyme, soy sauce, lemon juice and olive oil. Brush the mixture all over the tuna steaks. Cover with plastic wrap and let stand 1/2 to 1 hour until ready to broil.
Broil on rack under broiler about 4 inches from heat source, about 3 minutes per side, or grill on high (cover closed) 3 minutes per side. Leftover marinade can be heated and served over steaks.
With a spinach salad, chick peas, beets & fruit
I have 1168 items and I try not to go over 100 calorie ... that takes out a lot of the carbs but we all know any white is not good for you. Except rice ... brown rice has fat in it.

today I had 2 Whole wheat pancakes, apple banana (spinach salad with mushrooms and chick peas, and half a catalope.
oh and 1.5 gallons of water plus a multi vitamin and B complex.

Hi Matt ... I figure and from what I read if you stick to low fat and low calorie that takes care of the carbs. But low carbs is fine with me. I am 183 pounds now with only 14 inch arms and a 34 waist. So it is working but low carb is fine also ... anything to eat healthier.
