My mother-in-law, God bless her, when she was living always soaked her turkeys in salt water the night before Thanksgiving.

She was raised in Elkin, NC and they never had such things as store bought turkeys. So they had to soak the local turkey in salt water because it was tough.

The first time I had Thanksgiving at her house they let the Yankee (me) make the gravy. Of course I used the drippings from the turkey pan.

Well let me tell you I must have drank a gallon of water that evening from the salty gravy.

That was the last time she cooked the bird. I've been doing it every year since.
