AK...I like to cook but this sounds way too labor-intensive to suit me! LOL I have no idea why it calls for "Kosher" salt unless it's coarser than regular salt. I've never even seen Kosher salt ...isn't it used primarily by Jewish cooks?

"SALSA BORRACHA
Salsa Borracha, or "Drunken Sauce," is a wonderful sauce used in many dishes. But it goes especially well with insects. Chapulines, or grasshoppers, that have been dried and cured in lime juice are often served with it. So are Escamoles, or ant eggs, whose corn-like taste is set off by the complex flavors of the sauce."
For you gardeners out there...
Bread and Butter Pickles
4 Qts medium cucumbers (about 6 lbs)
1 1/2 cups onion, (about 1 lb)
2 large garlic cloves
/2 cup canning salt
4 1/2 cups sugar
1 1/2 tsps tumeric
1 1/2 tsps celery seed
2 tbsp mustard seed
3 cups white vinegar (9%)
2 Qts (2 trays) ice cubes
Wash cucumbers thoroughly. Slice unpeeled cukes into 1/8 or 1/4-inch slices; discard ends. Add onions, garlic and salt...mix thoroughly. Cover with ice cubes, let stand three hours. Drain thoroughly; remove garlic. Combine sugar, spices and vinegar; heat just to boiling. Add drained cucumbers and onion slices and heat five minutes.
(Do NOT boil or pickles will be mushy.)
Pack hot pickles loosely into sterilized jars.
Process in boiling water bath for five minutes...no longer than that. Remove from hot water carefully and let cool. Will store unrefrigerated for a year or longer.
Cabbage Rolls (Pigs and Blankets)
1 pound lean ground beef
1 cup cooked rice
1 small head cabbage
1 small onion, finely chopped
2 cloves garlic, minced
1 1/2 Tsp chili powder
1 Tsp mild paprika
1 Tsp basil
Salt and Pepper, to taste
Mix beef, rice and seasonings. Cook cabbage in boiling salted water til leaves are pliable. Remove outer leaves from cabbage. Wrap a leaf of cabbage around one heaping tablespoon of beef and rice mixture. Fasten with toothpicks. Line the bottom of a two-quart buttered casserole dish with remaining cabbage. Put cabbage rolls on top. Cover with tomato sauce. Bake covered one hour at 350.
Tomato Sauce
2 cups tomato juice
2 Tbsp brown sugar
1 Tbsp apple cider vinegar
1/2 Tsp salt
Mix and pour over cabbage rolls.

We're at a disadvantage where I live...our town really isn'[t that small but we're located between two large cities so most stores don't locate here. It's not worth it to them...especially since we have the super Lowes. We don't even have a Home Depot.

How about cabbage rolls? Made with ground beef and rice and rolled in cabbage leaves. My Mom called them "pigs in a blanket." It's an old German recipe...does that sound good to you?

This is a coincidence...we have a super Lowe's store here and I saw an ad just this weekend featuring no wax, prefinished hardwood floors. And they have a crew that will do the installation, however, I can't help but be a little leery. I had them install a new stove and wood shutters in my kitchen and I was far from satisfied. I just detest fooling with stuff like that so rather than make a fuss and prolong it, I just signed off on the job.
In my next life, I'm going to marry a guy like my Dad who could do ANY handyman job expertly. My DB can't hang a picture. Neither can I. LOL
