For you gardeners out there...

Bread and Butter Pickles

4 Qts medium cucumbers (about 6 lbs)
1 1/2 cups onion, (about 1 lb)
2 large garlic cloves
/2 cup canning salt
4 1/2 cups sugar
1 1/2 tsps tumeric
1 1/2 tsps celery seed
2 tbsp mustard seed
3 cups white vinegar (9%)
2 Qts (2 trays) ice cubes

Wash cucumbers thoroughly. Slice unpeeled cukes into 1/8 or 1/4-inch slices; discard ends. Add onions, garlic and salt...mix thoroughly. Cover with ice cubes, let stand three hours. Drain thoroughly; remove garlic. Combine sugar, spices and vinegar; heat just to boiling. Add drained cucumbers and onion slices and heat five minutes.

(Do NOT boil or pickles will be mushy.)

Pack hot pickles loosely into sterilized jars.

Process in boiling water bath for five minutes...no longer than that. Remove from hot water carefully and let cool. Will store unrefrigerated for a year or longer.
