I thought he'd discuss brands, which is the most important thing to talk about. Not a word, though.

And he says all diced tomatoes are junk. Not true; there are some good ones.

He doesn't even discuss the difference between San Marzano and the bottom of the barrel: the non-plum tomatoes.

They left it out because it is not a mistake. Just about every recipe I have read says to add salt to the water once it is boiling.
