I just break off the tail, then break off the little three-piece fan at the end of it, and push the meat out of the shell with a fork. Easier than splitting it. For the claws and knuckles, I use a nutcracker.
I noticed yesterday that the salmon you linked to from Harris Tweeter was sockeye. More expensive, but not crazy. Here it's $15.99 a pound at Acme. Since it's Pacific salmon, it must have been frozen and defrosted. So perhaps it'd make sense to buy it frozen.
