I continue to add parsley as it cooks down. Always another pinch at the end. I have to agree...parsley is a very underrated and underused ingredient. Don't get me wrong...I will enjoy a red sauce. I am not good at making it. I make stuffed banana peppers a lot...and will get a jar of marinara or similar red. Another one of my favorites.
I learned to cook going through hard times. I couldn't believe the money I wasted on crap food et al.. before such.
I am also making some lasagna on Monday. I'll use a red sauce there(jar). I have a bunch of Swiss Chard to gather...and will add mushrooms and onions to that as well(plenty of garlic cloves too). Once you eat that....you'll forget about using spinach. Best lasagna ever!
