Cover them with a dry rub of seasonings,
Cure them for a day,
Expose them to low heat from fruit wood,
Let the muscular fibers break their bonds with renderings from fatty tissue.
Perhaps a coating of something sweet like a
Molasses based tomato sauce,
Or a brown sugar....
Both with a contrasting acidic like orange or lemon.
