Those Bradley smokers are certainly top of the line, should provide years of entertainment and enjoyment considering your usage and years with the Chief :-). Much better money spent than on a video game system or something IMO.
A Bradley smoker will be on my wish list for the holidays eventually but the cheap Brinkmann works fine with lots of tinkering for now. Didn't get the new salmon rod had hoped for the holidays so will try that wish again next year LOL.
The Bradley recipe seems pretty basic. Probably a good way to start, although with jerky I'd definitely sprinkle on some crushed pepper once the meat's on the smoker. Definitely with you on both the pepper and garlic. Chili pepper flakes with the crushed pepper might be something I'd sprinkle on the top too. Probably throw a little Kikkoman's teriyaki sauce in the brine too.
Oh boy, gonna have to wait awhile personally before doing up some deer jerky. Fall hunting season is a ways off so I'll have to wait patiently for friend to bag a deer and route soem to me.

Have you ever tried smoking atlantic salmon? My wife had some from the store awhile back and was surprised how moist and rich the flavor was. It smoked up great, as well as fresh coho surprisingly.
