Ya i still don't think that aargument flies if cost is only $10/bbl vs selling it for mulitples more than that. I think there's a lot of fudging with #s with many ofthem.
Anyhow, I don't wnat to get too tied down with that stuff. I took a look and wasn't interested because many things didn't make sense to me.

On another note, just smoked up some more coho last night! Used heavier smoke but stuck with the wet brine. Tastes awesome though!
I can't figure out why smoked salmon tastes so much better AFTER refrigerating it. Most food hot off the grill is the way to go. But smoiked salmon is the opposite. I won't touch it until it has been in the fridge.
