Interesting. That makes sense to me.

Though frankly I don't think the oven temperature matters all that much; what does matter is the internal temperature. I go for 160, though I think you may be right. At the end of the cooking period, I find the temp goes up VERY fast within a few minutes. Better to take it out of the oven too early than too late.

Speaking of thermometers I did it again. 4 hours into the cooking I checked the temp with the thermometer and forgot to pull it out.

Melted the plastic cover again dammit. You'd think they could make one with a glass cover.
