That guy's reviews are worth watching. I did NOT imagine that bamboo would be harder than wood. Yet it is. He thinks plastic may be dangerously unsafe. Titanium and stainless steel do dull knives more than any of the other choices. And he doesn't like them for other reasons as wel.

His clear favorite is ordinary wood.The biggest disadvantage he sees in it is that it may be more expensive, and will require a bit of upkeep.
