I'm not a huge fan of stable coins. There've been problems with Tether for quite a while now. The principle makes a kind of sense, but I do not like the thought that politicians like Trump and his family can own them. As you say, they're connected to the dollar. Or to whatever the currency of the country in question is.

And how many should any one country have?
