It's a fad diet. But there are people who are allergic to gluten. I worked with a woman and she always carried an epi-pen with her when we went out to lunch in case the menu or waiter lied to her.

According to my bil and sil (who are Celliac? not sure if that's a word), the food industry started overusing it and putting it in everything.

It's not nearly as common in countries that don't typically have a lot of processed foods with additives in their diet according to them.
