What do you mean by "gravy"?? I think I'd use a 28 oz can of San Marzano tomatoes instead of the tomato paste, as the second two sauce recipes suggest.
But bolognese isn't supposed to be wildly tomatoey. The taste should be there, but it shouldn't overwhelm.
