BnB52: If the logo is built electronically say in Photoshop (or a similar program) the file can be separated from three colors (Red, Green and Blue) to the four printing colors (Black, Cyan, Magenta and Yellow) automatically.

Looks to me like most of the logos are going to require four color printing. So Matt might as well go for what he likes most. You do have a point about being reproducible in black and white.

So Matt, I would suggest you request all logos be submitted in color as well as black and white versions. Graphic programs like Photoshop can automatically render a black and white version from the color file. Of course, that does not necessarily mean the color version is going to translate well into a B&W version.
