That's interesting. My favorite is right out of the smoker. In fact after it's been in the fridge I'll often "freshen" it up with a few seconds in the microwave.

It freezes well too. I vacuum seal it.

Everyone is different of course, some like it very dry, some very moist and some inbetween so I usually do an assortment.
