As I said, I've brined turkeys, and the result was good. But I didn't roast an unbrined turkey along with the brined one. I do think that part of the fuss has to do with people in the past cooking them till they were practically carbonized.
Now here's my leftover recipe:
When I was a kid, my mother and I would go Christmas shopping at Marshall Field's in Chicago. It was a really fabulous department store. We'd always have lunch. They made a special "sandwich". It wasn't really a sandwich, except for a slice of bread. It was:
A single slice of rye, topped with a lot of lettuce. On top of that, several slices of swiss cheese, several slices of roast turkey, two pieces of bacon, cut in half. Garnished with hard boil egg quarters and tomato slices, and dressed with Russian....
One of my fondest childhood memories.
