Mushrooms? Maybe I am missing something. I don't see what advantages Mushrooms would have over yeast. Both are Fungi but yeast has the advantage of growing in suspension and secreting proteins readily, which simplifies purification. Yeast grows very fast and yeast molecular biology is quite advanced, thanks in a large part to the brewing industry --take it from a homebrewer!
