My wife is traveling less, so she's home more. She's not vegan, but does have dietary needs/requirements.
I like to experiment with food, so I'm trying a lot of vegan/meat free recipes. The tofu mayo, I've made for years. I like mayo, and it fit's the need in many of my recipes. If I feel the recipe needs real mayo, I either make it or use Hellman's.
I've always tried new foods. This ain't a "vegan kick".
It's an adventure.
FWIW........ I'll make that recipe again. I did use real provolone, so it wasn't "vegan".
