I'd go the pellet route now if I was still catering.
I love the "set it and forget it" style and it results in a good product.
I might do pulled pork 1 or twice a year. Never been a huge fan of it, but once in a while is nice.
Done right, it doesn't need a sauce, but I'm ok if it's sauced properly.
