I've read that many of the shark tank partnership details are hashed out by lawyers after the show. Bringing in a partner is far too difficult to be reduced to an engrossing 12-minute TV segment. Likely some of business ideas just come from kids who want to be on prime time TV and have no interest in working the often 60+ hours a week required to build a successful enterprise.
Restaurant Impossible's long-term track records aren't good, even when the show cherry picks the most promising prospects from many applicants.
