Pot cheese/farmer cheese.Twarog. The basic recipe is whole milk and vinegar. Salt if wanted. Then you can add different milks like buttermilk, goats milk and different vinegars. I love apple cider. You can also add spices like caroway in a cheesecloth so the seeds are not in the cheese. Then when you strain it through cheesecloth you control the dryness. I save the whey in case I need a wetter cheese. There are other things that can be done.
