I like the olive oil butter sauce idea, maybe a LITTLE lemon juice or zest to brighten it up, I'd go with zest. I'd feel compelled to add a little cheese on top though.

Another completely different idea is to pair it with scrambled eggs and bacon like a carbonara. Bacon and gorgonzola are a delicious pairing.
