Because he already has a wait staff that is already on the payroll.
Because he already has a cooking staff that is already on the payroll.
Because he already has a bar staff that is already on the payroll.
Because he already has a reservation and greeting staff that is already on the payroll.
Because he can make good use of all their time, while the IT guys fine tune things.
Because he can adjust the menu, and get it right, because he is gathering constructive feedback.
Because he wants the staff to start feeling like they are working in a restaurant as soon as he can.
Because you have to be flexible when things do not initially run perfectly.
Because even if the technology is working perfectly, it is the people that make the experience complete, not the machines.
Because there is nothing like the real thing beginning to happen, to make you realize that certain IT aspects of it could be better. How often have you wanted to adjust a report, or a menu option, or a function on the screen?
Because practice makes perfect.
