I'm not sure I agree. By the time it's done, the proportion of bacon to potato-cheese isn't really that outrageous. It doesn't look like something you'd eat a huge slice of.

My concern would be that the bacon fat would pool in the pan. He pours it out at the end, but still, I think you'd get some rather unpleasant pooling. In any case, it's not on my Make This Soon! list...
