Lemon and Garlic Chicken With Cherry Tomatoes

This is a summery dish to make in the middle of a cold winter (or early spring), but you can find decent cherry tomatoes even now, from Florida or from Mexico. I marinate the breasts in lemon juice, olive oil, garlic and rosemary before I pound them. This makes them very flavorful, a great savory contrast to the sweet tomato topping.
INGREDIENTS
Yield:
Serves 4
2tablespoons extra-virgin olive oil
3tablespoons fresh lemon juice
2garlic cloves, minced or pureed
1teaspoon chopped fresh rosemary
Salt and freshly ground pepper to taste
2boneless skinless chicken breasts (most weight 8 to 10 ounces)
¼cup dry white wine
2heaped cups cherry tomatoes, – about ¾ pound
Pinch of sugar
2tablespoons all-purpose flour or a gluten- free flour such as rice flour or corn flour
2tablespoons grapeseed, sunflower or canola oil
1tablespoon chopped flat-leaf parsley
¼cup freshly grated Parmesan (optional)
PREPARATION
Step 1
Stir together the olive oil, lemon juice, garlic, rosemary, and salt and pepper in a large bowl. Cut each chicken breast into 2 equal pieces (3 if they weigh 12 ounces or more) and place in the bowl. Stir together and refrigerate 15 to 30 minutes.
Step 2
Remove chicken from marinade and pat dry with paper towels (discard marinade). Place two sheets of plastic wrap (1 large sheet if you have extra-wide wrap) on your work surface, overlapping slightly, to make 1 wide sheet, and brush lightly with olive oil. Place a piece of chicken in the middle of plastic sheet and brush lightly with oil. Cover the chicken with another wide layer of plastic wrap. Working from the center to the outside, pound chicken breast with the flat side of a meat tenderizer until about ¼ inch thick. (Don’t pound too hard or you’ll tear the meat. If that happens it won’t be the end of the world, you’ll just have a few pieces to cook.) Repeat with the remaining chicken breast pieces.
Step 3
Season the pounded chicken breasts with salt and pepper on one side only. Dredge lightly in the flour (you will not use all of it) and tap the breasts to remove excess.
Step 4
Turn oven on low. Heat a wide, heavy skillet over high heat and add oil. When oil is hot, place one or two pieces of chicken in the pan – however many will fit without crowding. Cook for 1½ minutes, until bottom is browned in spots. Turn over and brown other side, about 1½ minutes. (Do not overcook or chicken will be dry.) Transfer to a platter or sheet pan and keep warm in the oven. If there is more than a tablespoon of fat in the pan, pour some off into a jar or bowl.
Step 5
Turn heat on burner down to medium-high. Add wine to pan and stir with a wooden spoon to deglaze. Add cherry tomatoes and cook, stirring often or tossing in the pan, until they begin to shrivel and burst. Add sugar and salt and pepper to taste and continue to cook, tossing the tomatoes in the pan and stirring often, for 5 to 10 minutes, until tomatoes have collapsed but are still intact. Top chicken breasts with the tomatoes, sprinkle with parsley and with Parmesan if using, and serve.
TIP
Advance preparation: The chicken breasts can be pounded several hours ahead – but don’t marinate them until shortly before cooking – and kept between pieces of plastic in the refrigerator.

This classic stir-fry recipe, adapted from “The Key to Chinese Cooking” by Irene Kuo, calls for velveting chicken breast, a process of marinating the meat in a mix of egg white, cornstarch, salt and Shaoxing wine, and then blanching it. The extra steps help ensure that the lean chicken stays very tender and silky, even when seared at very high heat. You can use this basic recipe as a template for any chicken stir-fry, varying the vegetables depending on the season and what’s available. Serve it piping hot, with rice on the side. —Melissa Clark
INGREDIENTS
Yield:
3 to 4 servings
1pound boneless, skinless chicken breasts, cut crosswise (against the grain) into ?-inch-thick slices, 1½ to 2 inches long
1tablespoon Shaoxing wine or dry sherry
1teaspoon fine sea salt
1large egg white
1tablespoon cornstarch, plus another 2 teaspoons, if you like
5tablespoons neutral oil (peanut, safflower, grapeseed)
2ounces snow peas, trimmed and cut in half crosswise (about ¾ cup sliced)
8ounces mushrooms (any kind you like), sliced
1teaspoon grated fresh ginger
1tablespoon soy sauce, more to taste
2teaspoons sesame oil
PREPARATION
Step 1
Put the chicken slices into a bowl, and stir in Shaoxing wine and ½ teaspoon salt. In another bowl, beat the egg white until the gel is broken and it thins out slightly (it should not be frothy) and add to the chicken mixture. Sprinkle in 1 tablespoon cornstarch and mix well. Add 1 tablespoon neutral oil and stir until smooth.
Step 2
Refrigerate chicken for at least 30 minutes and up to 2 hours so the coating has time to adhere to the meat.
Step 3
Bring a medium saucepan of water to a boil, then add 1 tablespoon neutral oil. Add the snow peas to a sieve or strainer that fits in the pot. Lower into boiling water for 10 seconds. Pull out the sieve (leaving water in the pot) and rinse snow peas with cold water. (Alternatively, you can put the snow peas directly in the water, stir once with a slotted spoon, then scoop them up and drain in a colander, rinsing well with cold water to stop the cooking.)
Step 4
Lower heat to maintain a gentle simmer. Add in the chicken, stir to separate, and keep stirring gently until the coating turns white, about 1 minute. Drain chicken. (If you’d like a thicker, glossier sauce, whisk 2 teaspoons cornstarch with 1½ tablespoons warm water until the cornstarch has dissolved. Reserve.)
Step 5
Heat a wok or large, heavy skillet over high heat. Once hot, add remaining 3 tablespoons neutral oil, swirl and heat for 30 seconds. Add mushrooms and ginger to hot oil, and stir and flip rapidly for about 30 seconds, or until the color of the mushrooms begins to brighten. Add the snow peas and remaining ½ teaspoon salt, and briskly stir mixture for 1 minute.
Step 6
Add the chicken, soy sauce and reserved cornstarch slurry if using, and stir until the mixture is coated. Add the sesame oil, flip the mixture a few times and cook until the chicken is just cooked through, about 1 to 2 minutes. Serve immediately.

Health insurers for employers decided they didn't want to deal with all the drug claims so they hired companies like Optum and CVS to deal with scripts.
My son's company uses Optum Rx as their pharmacy benefit manager.
Now if you're paying attention CVS has been quite successful in the PBM business while Walgreens WBA missed the boat entirely. Understanding this you'll start to realize why Amazon wants to get into the game.

Because some think Boone can do no wrong. It's time to fire him. Why they re-signed him has been a mystery to me.
Right now the rotation needs warm bodies. And a good pitching coach wouldn't hurt.
I'm sure Cashman will find a way to insult Soto and end up costing the Yankees another $100M.
Yes they are charging a fee. The stock pays a nice dividend despite the fee and foreign tax paid. My one year gain on the stock is over 25% despite it being down YTD.

You haven't been paying attention. Optum Rx pharmacists not only questioned a script they denied it based on their formulary overriding 2 doctors who wrote the script for 50 mg twice a day and would only fill a script for 30 pills instead of 60 a month which he had been taking for several years and covered by my wife's healthcare plan.
What's laughable is they had no problem filling 2 scripts for 70 and 30 but couldn't fill one script for 60 50 mgs.
So they jeopardized not only his welfare but his job.
Now I'm done with the conversation. It's all one big game and the patient loses.
My wife would kill me if I ever sold VLVLY. She worked for them for over 40 years.

VLVLY is one of those stocks that Fido charges me a commission. They are based in Sweden and moved to the pinks since they didn't want to do the double filing any more.

The one month my son had to ration his Vyvanse on weekends he couldn't focus for crap. He is a manager and trainer at Fedex which right now is the perfect job for him since every day something new pops up. I can assure you after all the research I have done he definitely has ADHD. When he was young I was skeptical until we took the Connors test and saw the results.
I'm sure it is over diagnosed but that was never the case with him. My issue is with the cheaters as I posted about and have driven up his costs though he can well afford it. When he was on my wife's healthcare plan his script was costing us $150 a month for 60 50 mg pills. Now he needs to pay double out of pocket for 2 scripts of 70 and 30.
My problem is how does Optum Rx get to deny a script from 2 different doctors and cutting the script in half with zero concern for the employee. And how does the FDA allow for the bogus scripts to get written so the generic is no longer available?
BTW next time you see a Fedex driver ask him what he ships the most of. It's good for a stock tip.

And Rizzo is all class.
He played first base and Ben Rice is not Lou Gehrig yet.
Mets runn diff is +4. They may get on base but they are not scoring runs.
Right now Gil is a much better pitcher than Severino. If the Yankees had a legit pitching coach I'm sure he could figure it out.
As for Volpe he was much better than the previous leadoff hitter. Granted he has his ups and downs. I don't like people who kick players when they are in a slump but that is just me.
Torres is fair game however.
Companies such as Optum RX and CVS are hired by companies who offer prescription plans for the sole purpose of reducing costs. So they quote their own formulary experts to dispute the scripts and override the patient's doctors.
His doctor knows how the game is played and their pharmacy expert wrote 2 scripts for 70 and 30 that the plan couldn't deny.
My son was fortunate he had a good pediatrician that recognized the problem and after numerous tests as I mentioned prescribed Adderall which allowed him to excel through grammar and high school. Once he was old enough he started seeing a psychologist to understand the problem.
Along the way I continued to learn more and more about ADHD and pretty much understand the causes now.
My only suggestion today is for parents to pay more attention to their kids. I coached youth baseball for 10 years and could tell the kids who had ADHD and ADD.
