1- 13 CHECK! I've done them all. And a WHOOOOOLE bunch more.

Started making cheeses, smoking and drying meats and even growing our own spices and such.

Plenty of fresh ginger for ginger beer and right down to turmeric root.

I use that a lot in Thai food.

Lots of fruits we Northerners never heard of, like; Jujube, Caimita, Araza, Grumichama.

I just put up olives today in herbed brine. They look beautiful. Some regular, some definitely spicy.

Knowing how to make a pack rack and pack a horse, donkey, or other beast of burden is a good one too.

That a pretty much forgotten art in the U.S.

I give my thanks to Estephán and Carlos for that knowledge.

The way the wood cutters tie up wood is simply ingenious!

Like a four legged dump truck!
