Can you prove that I didn't cause the sun to rise and the create the universe you inhabit? Does it make that a valid hypothesis for how it all happened? You can't prove it isn't true.
Humans evolved, as did all creatures from simpler organisms. To call it a theory is only a nod to the fact that there is no way to control for the intervening millions of years... The fossil record is fairly clear on the broad strokes. Just not to you.
