I don't believe your potential scenario could happen. The EC and the debtors have to legally exchange any evidence--in this case, valuation numbers--if they wish to use those numbers at the confirmation hearing. Neither group could legally surprise the other by putting an expert witness on the stand. This is all standard procedure, and I'm sure the EC agreed to it willingly. It should also indicate that we will see valuations from both sides at the confirmation hearings. If they even occur, that is.
