bbotcs - Maybe it is a reference to their "stinky cheese" varieties. From their site, evidently "stinky, washed-rind" cheeses are best compliments to strong beer such as an IPA. Since I'm a huge IPA fan, I may have to try some stinky cheese from ArtisANAL.
