Assuming that the snake was indeed Satan, would two innocent lambs stand a chance? Prior to knowing good and evil? I suppose that this is where "ignorance of the law is no excuse" comes from."

Adam and Eve were not "lambs" -- they were fully adult and perfect specimens of humanity. We cannot know for sure, but logic indicates that being perfect and living in a perfect environment, they probably had the highest IQ's ever in history. Your "ignorance of the law is no excuse" theory does not wash, for they were both given God's command directly by God and they knew (see Eve's conversation with Satan) exactly what that command was. It was the only thing in the Garden that was denied them, and the only negative command that God gave them. They knew right from wrong in this case -- right was to obey God, and wrong was to disobey God. Pretty simple, and without any ambiguity whatsoever. They also knew the penalty for disobedience -- death.

Once Satan made his pitch, Adam and Eve had a choice to make -- to believe Satan and disobey God, or to believe God and obey Him. They made a bad choice, and paid the penalty for it.

God indeed "showed up" after they sinned. Actually, He was there when they sinned, He just showed up in a visible manner after the sin. He was angry, as you said, and rightfully so -- they had willfully and knowingly chosen to disobey His direct command to them.
