First, the first offer Israel accepted in 1947 was an non contiguous state (the 181 partition resolution), Second, the offer included Gaza and most of the west bank, yes, non contiguous, and yes not very defensible. Just as Kaliningrad is "indefensible" and non contiguous with the rest of Russia, and Bangladesh before its independence was non contiguous with Pakistan (it was part of Pakistan, it used to be called "Eastern Pakistan"). No, only the defense of the skies would have been left to the Israeli Air Force, with no ground troops, for "practical reasons", I believe also that the new second Palestine was to be demilitarized, only with Police forces and no formal army, not sure about that detail. Mind you, these were not the reasons given by Arafat for not accepting, the reasons were the lack of a "right of return" of refugees to within the state of Israel (right of return to within the new Palestine is of course implied). I believe I have explained many times why such "right of return" cant become "International law", without destabilization of the whole world order (do a search on words like Sikhs or Breslau or Gdansk).
