... which is rice and beans, not maize and beans ... but with pork the same, and widely varying spices ... a cubana dish, a person we know makes it all the time, only with black beans not red as in that recipe ... and differently each time for variety, sometimes with epazote and/or cilantro and/or one of several mints and/or gai lan, all of which are my influence as i set her up with a small garden and those plants .... also shortly before serving she chops more red onion and throws it in ... it's better the second day than the first, all stews together ... a little well-cooked potato can thicken up the sauce too, i see that's in the succotash recipe there .... ah, getting hungry now -g-
