To a degree what you wrote has truth, but it assumes that the roman catholic church is and was "the church". It is not today, nor was it in the formative years of the early church -- in fact, the catholic church was not even in existence during those formative years.

The letters of Paul were widely circulated and accepted as Scripture almost immediately, as attested by Peter's reference to them as being Scripture. The Gospels were also immediately accepted (largely due to their authorship), with the gospel of John being the last to be completed around 90 AD. The rest of the canon that we now have was generally accepted by the church as a whole by the end of the second century as reflected in the writings of the early church fathers, as I indicated in my post.

If all the knowledge you have is found in science, your knowledge base is sadly deficient. Where do you get a sense of morality and ethics, for instance?? Not from science, that is certain.
