Oh, it's horrible stuff. But the real Chef Boiardi was really Italian, and a decent chef. He immigrated to the States and opened an Italian restaurant somewhere in the midwest when Italian food wasn't a thing.

People loved it, so he began doing takeout from his restaurant. Not, I believe, soggy dressed pasta, but sauce in jars. It developed from there.
