Speaking of cooking...here's a great recipe. Very tasty...fixed it last night and got a tip from MDB. I hope that dadgum horsie wins today!
Fettucine with Shrimp and Spinach
1 cup sour cream
1/2 cup crumbled Feta cheese with sun-dried tomatoes and basil.
3 cloves garlic, peeled and chopped
8 ox fettuccine pasta, uncooked
1 pkg (10 ox) frozen chopped spinach
1 lb shrimp (medium-size), uncooked, peeled and deveined.
Add-ons: For a spicier flavor, add 1/4 tsp crushed red pepper and 1 tsp dried basil.
In a large bowl, combine the sour cream, feta cheese and garlic. Season to taste with salt and pepper. Set mixture aside.
Cook pasta according to package directions but after the first 8 minutes of cooking, add spinach and shrimp to boiling pasta. Cook pasta mixture for 2 more minutes. Drain pasts mixture thoroughly.
Add hot pasta mixture to sour cream mixture and toss gently.
Serve immediately...makes 6 servings.
Note...carb content = 19 grams per serving
