I used to breed new strains by using mutagens (such as colchicine) on seeds and then using selection for desired traits, then crossing with stains with known characteristics. My best one was one that had basically no odor until about two weeks before harvest, designed for urban backyard growers with Karen neighbors. I grew it for a few years, but eventually lost it to pests.

The market has crashed... now outdoor grown prime bud is going for 3 to $400 per lb. It was 900-$1000 last year. It is shaking out the small commercial growers. I just grow legally at hobby level. I can grow 12 plants for medical or 6 for recreational... I have a backlog as I produce more for my medical giveaway and gifts to friends than I would ever consume, as I smoke it only once in while, and am enjoying some indica-based edibles as an analgesic now as I come off of surgery, as I don't like even the idea of opioids, which were prescribed but will stay in my medicine cabinet for emergencies, such as a broken bone or something.

Anyway, maybe I should send you some pictures, my garden this year boasts one sativa plant at 12'6" and one at an even 12'. The colas on my indica resemble baseball bats. No frost in sight, so I am estimating I will have 6 or 8 lbs. in a few weeks. I have never been to one of the festivals which includes the state fair, as you mentioned, those seem to be for people who like pot too much to the point where they even dress alike, sort of a northern california subculture that I am not interested in. I prefer having a haircut. I do sell rocks and crystals as cleavage candy to the ones that are metaphysically inclined, on their way to Burning Man, but the Burn is cancelled again this year.
