Weeeelllll, you don't eat the shell, K2. One of the local favorites here is Snapper Soup. I used to make a few extra bucks by catching snapping turtles and selling them to a local restaurant. The chef made the absolute best Snapper Soup in the entire world, or maybe in just Franklin County, Pa.
To make Snapper Soup, only the meat from the neck, tail, and legs is used. While there are a few more edible parts, those make up the major part of the meat that goes into the soup. Usually, a 25 pound turtle will yield about 4 pounds of meat, and several gallons of wonderful soup. I have made it a couple of times, but mine doesn't come close to Chef Rick's stuff.
