OT ~ blues I like small .. 12 inches...I fillet them.. its hard cause the meat is so soft.. it helps if you fillet then with the skin on .. then pop em in the fridge. to chill the meat.. firms it up a little then with a sharp knife fillet the skin off..

then you put them in lemon juice.. while they sit in there for a bit.. you mix a fifty fifty of bisquick and fine cornmeal.. get an electric skillet.. a little canola... and fry till golden brown.. serve with lemon and your favorite sauce red or white.. and a strawberry daquari.. and your good to go.. add asparagus fritters or fresh baby snap peas and carrots.. battered mushrooms..
