MT stores the last used settings for a chart, or will use a previously defined default (mentioned in previous reply).

You don't right click to change templates. That option is in the TEMPLATES tab on the ribbon.

NOTE: About ribbons in general - you can customize them, hide or minimize them or put stuff that you use most often in the Quick Access Toolbar (QAT) on the window caption, which is visible even when the ribbon is hidden. You can read more on that in the help. Search for Ribbon.
