Intel employees physicists with knowledge of things like quantum mechanics to work on their process research, mathematicians, software engineers, HR people, bookkeepers an accountants.

The later two keep and compile records for purposes of tax reporting another other things. From time to time Intel is subject to audit by different agencies of government to whom they report on a regular basis.

additionally when a legal action is initiated there is a process called disclosure, not that complicated.
