Restaurant (Catering biz, actually) is doing well, thank you for asking!

Just got off the phone with Canon and it does seem that they are in the dark ages with respect to 64-bit drivers for smaller printers. Their 64-bit support has been mainly developed for larger floor-standing models which generally run from enterprise servers. There is also support for PS & PCL printers, that is a no-brainer.

However, the MF5550 uses a proprietary printer language which is only shared by a handful of MF5xxx machines. Canon has not announced any intentions of supporting them in 64-bit, it is possible a successor MF printer will have a 64-bit driver that can be shoe-horned on to my installation. (I definitely will not hold my breath!)

Looks like I will need to dual-boot with 32-bit OS, which will be the default until these issues are resolved.
