VMWare just reported 24% YoY profit growth yesterday - it makes sense for big companies that run multiple operating systems and need the flexibility in their servers to run Linux (various flavors and bitness) and Windows on the same hardware. And maybe even some others like OSX or Solaris or lessor Unix variants that don't have ARM ports.

On the development side, I think that you still need x86 machines to develop Apps for iOS, Windows Phone and Android.

One way that ARM could make inroads into server work would be a robust and efficient Java implementation as Java seems to be the most portable thing out there for development. Java doesn't give you the best performance though and there are pretty big limits in what you can do with low-level stuff to improve performance.
