Evolution - yes, they will be taught about evolution - they already have been. The subject always gives us a good laugh. They are already pretty good at mathematics, so they aren't snowed by the evolution mantra.

Church & state issues - yes. They are studying US history this year (up to 1860), so the issue is critical when considering the founders of the country. Last year they studied ancient civilizations.

They are 10 and 8, but we are already studying history deeply. We'll cycle through each period every 4 years, at a deeper level each time.
