I would say yes. Companies like RackSpace have a reputation to uphold, so I imagine that privacy and protection of Company's informations would be a given. They're in business to provide a secure server for your site.
I imagine that other companies would want to test the system, yes. It wouldn't take as long as a full beta test, if their primary goal were to see if their information was secure. A couple weeks, maybe?
