I hear you. In my second career (I used to do the whole corporate road warrior thing- yuk!) I install crown regularly, but not daily. It always takes a few minutes to get your mind around it. Fortunately, the tools today make it much easier. I use one of those 12" dewalt slide saws, which miters from -50 to +60 degrees and bevels -45 to +45. With such a tool, you don't to do the traditional upside down and backwards cuts.
The inside corners are always the toughest. Whenever possible, I glue and pin those on the floor and hang the corner as a unit. Not only does that make for a perfect corner, but it sets the crown properly to the walls and ceiling making the subsequent pieces easier. That being said, there are probably as many methods as there are carpenters... so any way that works is correct.
Don't give up on it; once you get past some frustration and a few wrong cuts it makes that final fit most satisfying.
