Slate. I can remember leaning my face on a chalk board as a kid, but I think that's chalk smell and taste I remember, not slate. I have spent a fair amount of time with my face inches from slate, but there was a layer of green felt in between.

And flint. I know the smell flint makes when it ignites a spark, but I think that is ozone. And gun metal. Fortunately, I have never tasted a gun, but I know what they smell like. Usually gunpowder and machine oil.

I think the wheel will be a big help. I distilled the user guide out of the pdf and will post it next stand alone, so a link can be in the ibox. Sounds like this will be a lot of fun. The supermarket trip to get some tastes down in particular. Haven't forgotten the quinze jam.
