I'm a Kung Pao chicken sort of dude myself, (I love sea food, but it's so hard to get it fresh, you know?), but I'll second the 1-lb of hot peppers.

I used to make KP chicken for my buddies when we had the munchies. One of them named my recipe "Gun Powder Chicken." Another called it the "Double Hurt" -- he said "It hurts like he!! going in and it hurts even worse coming out!" {g}
