Yes all species of Pacific Salmon only spawn once, then die and provide nutrients for the rivers and streams, and food for bears, gulls, eagles etc etc.

Each species when on the spawning run start to make many body changes, color being one of them. Check this site out, it shows pictures of them all.

Atlantic salmon and steelhead will spawn more than once.
